- 1 cup quinoa
- 1 can black beans
- 1 can sweet corn
- Mexican blend shredded Cheese
- Bring water to bowl in a small pot, add quinoa, reduce heat and cook until done (about 15 minutes).
- While quinoa is cooking, place beans and corn into separate pots and cook on high until done.
- Prepare burrito bowls by adding quinoa, beans and corn into a bowl.
- Add salsa and cheese (as much or as little as you like)
