Wild Rice and Broccoli Salad with Edamame

Ingredients2 cups cooked wild rice

1 bell pepper, diced

⅔ cup raisins

2 cups shelled edamame, cooked

1 cup peas

4 cups broccoli, cut into small pieces and lightly steamed

1 tsp sea salt

2 tbsp fresh lemon juice

3 tbsp tahini

1 tsp apple cider vinegar

pepper, to taste

dash of hot sauce, optional

Instructions

Add all ingredients to a large bowl and mix well.

Store in the fridge in a container for up to 4 days.
